Easy Slasa

I love chips and salsa, this is a quick and easy homemade salsa that allows you to control the heat. It does contain cilantro, which I happen to like, I know it can be a controversal  ingredient.

Ingredients

  • One10-ounce cans of diced green chilies

  • One 14.5-ounce can whole tomatoes with juice

  • 1/4 -1/2 cup fresh cilantro leaves (more, less or none)

  • 1/4 cup chopped onion

  • 1 clove garlic, minced

  • 1 whole jalapeno, quartered (remove seeds and membrane if you don’t like it spicy)

  • 1/8 teaspoon ground cumin

  • 1/8 teaspoon salt

  • 1/8 teaspoon sugar

  • 1/2 whole lime, juiced

Instructions

  1. Combine the green chilies, whole tomatoes, cilantro, onions, garlic, jalapeno, cumin, salt, sugar and lime juice in a blender or food processor.(if using a food processor you may need to do in batches and then combine in a larger bowl).
  2. Pulse 10-15 times until you get the salsa to the consistency you’d like.
  3. Do a taste test with a chip and adjust as needed. Keep in mind it can get more spicy as it sits.
  4. Refrigerate the salsa for at least an hour before serving.
