Pick-Your-Flavor Sourdough Scones
I have searched high and low for a recipe that would make a scone with a crispy outside and a soft and tender inside. My favorite mix-in is cinnamon chips… they are hard to find but are AMAZING!
Ingredients
- 1½ cups (188 grams) all-purpose flour
- 3 tsp (36 grams) granulated sugar
- 1 tbsp(15 grams) baking powder
- ½ tsp (1.5 grams) salt
- 5 tbsp (70 grams) cold butter, cubed
- ½ cup mix-ins of choice
- 1 cup (275 grams) sourdough starter discard
- ½ cup (120 grams) heavy cream, plus more for brushing
- 1 tsp (12 grams) turbinado sugar

64 grams dried fruit
85 grams peanut butter, cinnamon, or milk chocolate morsels
Instructions
- Preheat oven to 425°F.
- Line a baking sheet with parchment paper.
- In a bowl place flour, granulated sugar, baking powder, and salt and stir until combined.
- Add cold butter, and cut in with a pastry cutter until crumbly with some large pieces of butter.
- Add and stir in desired mix-ins.
- In another bowl, stir together sourdough discard and cream until combined.
- Add discard and cream mixture to flour mixture, stirring gently just until dough comes together.
- Turn out dough onto a lightly floured surface, and knead a few times until a slightly sticky dough is formed. A little more flour can be added if it is too sticky.
Gently pat dough into an 8-inch circle, about 1 inch thick.
Cut into 8 triangles. - Place scones on prepared pan.
- Brush top of scones with cream, and sprinkle with sugar.
- Bake until tops and edges are lightly golden brown, 12 to 15 minutes.
- Let cool on pan for 10 minutes. Serve warm or at room temperature.
