Grandma’s Chicken Devan

This is my comfort food. It is warm, savory and filling. I could eat it once a week. Plus, it reminds me of my Grandma. It is a great way to use up those last bits of rotisserie chicken or even Thanksgiving turkey leftovers. We have tweaked Grandma’s recipe a little bit over the years to include a crunchy topping (not in picture) but I don’t think she would mind

Ingredients

  • 2-3 cups of chicken or turkey
  • 1 (10 3/4 ounce) can cream of chicken soup
  • 1⁄2 cup mayonnaise
  • 1⁄2 – 1 teaspoon curry powder, to taste
  • 1 1/2 – 2 cups broccoli florets, cooked al dente
  • 1⁄2 cup shredded cheddar cheese (or more!)

Toppings

We like to top it with uncooked boxed stuffing mix to add some crunch. But you can use breadcrumbs.

Instructions

  1. Preheat oven to 350 degrees F.
  2. Pull out a 1 1/2-quart baking dish.
  3. Cut, shred, or cube chicken/turkey into whatever size/shape you want – we do whatever is easy at the moment.
  4. In a small bowl combine cream of chicken soup, mayo, and curry powder.
  5. Cover with chicken or turkey.
  6. Sprinkle about half of the cheese over the chicken/turkey and broccoli
  7. Pour soup mixture evenly over chicken and broccoli.
  8. Sprinkle with the rest of the cheese
  9. Add topping if desired
  10. Bake until heated through, about 25 minutes.
  11. Serve with rice
