Grandma’s Chicken Devan
Grandma’s Chicken Devan
This is my comfort food. It is warm, savory and filling. I could eat it once a week. Plus, it reminds me of my Grandma. It is a great way to use up those last bits of rotisserie chicken or even Thanksgiving turkey leftovers. We have tweaked Grandma’s recipe a little bit over the years to include a crunchy topping (not in picture) but I don’t think she would mind
Ingredients
-
2-3 cups of chicken or turkey
-
1 (10 3/4 ounce) can cream of chicken soup
-
1⁄2 cup mayonnaise
-
1⁄2 – 1 teaspoon curry powder, to taste
-
1 1/2 – 2 cups broccoli florets, cooked al dente
-
1⁄2 cup shredded cheddar cheese (or more!)
Toppings
We like to top it with uncooked boxed stuffing mix to add some crunch. But you can use breadcrumbs.
Instructions
- Preheat oven to 350 degrees F.
- Pull out a 1 1/2-quart baking dish.
- Cut, shred, or cube chicken/turkey into whatever size/shape you want – we do whatever is easy at the moment.
- In a small bowl combine cream of chicken soup, mayo, and curry powder.
- Cover with chicken or turkey.
- Sprinkle about half of the cheese over the chicken/turkey and broccoli
- Pour soup mixture evenly over chicken and broccoli.
- Sprinkle with the rest of the cheese
- Add topping if desired
- Bake until heated through, about 25 minutes.
- Serve with rice
